Preparation
Arrange the octopus and cook it in water with the onion (skewered with cloves), the washed garlic cloves, the bay leaf and the oil.
Bake for approximately 40 minutes until soft. after that time, rectify the seasoning and let it cool.
After cold, drain the octopus and cut it into regular pieces.
In a deep dish, place the flour with a pinch of salt and pepper, mix and opening a cavity in the center.
Add egg yolks and beer on wire, stirring constantly.
Add the egg whites and mix gently. Pass the octopus through this preparation and fry it in hot oil on both sides.
Remove and drain on absorbent paper.
