Preparation

1. Wash the figs well and peel them carefully.
2. Cook in boiling water for 5 minutes and drain.
3. make a syrup with the sugar and the 4 cups of water.
4. Add the figs and, over low heat, let cook.
5.When all the syrup has dried (a process that takes a few hours), stir all the figs with the crystallized sugar that has formed at the bottom of the pan.
6.If you like, add a few drops of green food coloring. cool and store.
