Preparation
Knead the flour with the eggs and water until you get a homogeneous pasta dough. Wrap and let rest for at least 1 hour in the refrigerator.
In a frying pan sauté the onion with the butter for a few minutes. Add leek and parsley. Sauté for a few more minutes. Remove the frying pan from the stove and add the raw ground meat, ham, bread and spinach. Mix these ingredients and let cool in the refrigerator.
Cook the German ravioli in a broth and serve hot finished with fresh herbs.

- 300 g of sifted wheat flour
- 2 egg
- Approx. 2 tablespoons of cold water
- 1 onion, diced
- 40 g of butter
- ½ diced leek stalk
- ¼ bunch of freshly chopped parsley
- 200 g of ground beef
- 50 g of chopped cooked ham
- ½ French bread moistened with a little milk
- 100 g of chopped precooked spinach leaves
- 1 onion cut into thin rings
- 20 g of butter
- ¼ thin chives cut into rings
