Preparation

Wash the mussels well and set aside.

Cut the onion and tomato into slices.

Chop the garlic cloves and cut the peppers into strips.

Put the oil in the cataplana and arrange layers of onion, garlic, tomato and bay leaf.

Add the mussels and drizzle with the wine.

Cover with the pepper strips and sprinkle with the chopped parsley.

Close the cataplana and simmer for 20 minutes, shaking the cataplana every now and then

Sprinkle with coriander. Serve hot and have a good appetite!
