an hour before putting the meat in the oven, spread it well with a pastita made with minced garlic and onion, lemon juice, salt and pepper.
then place the meat in a greased baking dish and bathe it with oil. put in the oven, which should be at 230 degrees c., and leave about an hour, that is, until the meat is soft.
Separately, put the cup of sugar and the cup of water in a saucepan, and stir with a spoon until the sugar has melted. when it boils, stop stirring and add the teaspoon of lemon juice.
Boil for a minute and add the plums (which must be ripe), well washed. boil until well cooked, and serve with the meat.
