cook the potatoes in the water until soft. add the stew, salt and pepper to taste. let it cook for ten more minutes. before serving, add the finely chopped cilantro. some santandereanos accompany the potato broth with toasts or soda crackers adding them in crumbs with the coriander and adding an egg in the last minutes of cooking.
