Preparation

In a hot pan over high heat pour a tablespoon of the oil, put the shrimp and fry them for three minutes; remove them and set aside; put put oil challenge in hot skillet. Add the potatoes and season very well; Sauté four minutes over medium heat, stir well and cover the pan until the potatoes are cooked through. Add the mushrooms, garlic, and chopped parsley. Pour the shrimp into the pan, mix well, and simmer for two minutes.

  • 1 pound shrimp peeled and halved
  • 2 tablespoons olive oil
  • 2 medium potatoes, peeled and diced
  • 1/2 pound fresh mushrooms washed and quartered
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh parsley
  • Salt and pepper to taste
