Preparation

peel the shrimp and reserve it, as well as the shells and heads. bring to a boil a pan with half the oil and sauté the onion, garlic and tomato, all chopped.
add the tomato pulp and the shrimp kernels and after sautéing, the shells and the heads of the seafood. as soon as the mixture gains color, add the flour and mix well.
drizzle with water and season with salt and pepper. boil for 20 minutes.
grind the soup with the magic wand and strain it through a fine mesh strainer (this operation is essential to eliminate any residue of peels).
place on serving plates, sprinkle it with chopped chives (or cilantro) and decorate with triangles of toasted bread.
