the snail is hit with a hammer or stone to soften it and cut into small pieces.

cover the snail with boiling water and leave it until it cools, strain it.

Mix the snail meat with the lemon juice, salt, onion and pepper and leave it to rest for 3 hours. At the moment of serving, mix the peeled tomato and the chili.

  • 1 habanero pepper
  • deveined and chopped
