two hours before making them, put them in a colander and sprinkle them with abundant coarse salt.
prepare the coals of your stove and heat the grill well (this is very important so that the fish does not stick to the grill), placing it at a distance of about 5 cm from the coals.
shake or if you prefer rinse the sardines under running water (inside the colander) and place them on the grill. bake them well on both sides (depending on the coals of your stove +/- 3 minutes on each side).
if the embers catch fire with the fat released by the sardines, do not pour water, just lift the grill and wait for the fire to go out.
remove the sardines to a serving dish and serve with a salad of potatoes and oregano.
