Preparation

Start by soaking the cod.

Wash the potatoes and cook them with the skin, for 20 minutes, in water seasoned with salt. Then drain them, let them cool a little and remove their skin.

Peel the shallots, onions and garlic.

Bring a skillet to the heat with the oil, let it warm, add the cod pieces passed through flour and let them fry slightly without leaving them with color. Remove and place in a crockery or earthenware tray.

Fold the slices of ham in half lengthwise and arrange a slice around each piece. Add the cooked potatoes and chives.

Chop the onion and the garlic, add to the pan with the oil to fry the cod, add the bay leaves and cook until the onion is tender.

Then add the chopped peeled tomatoes with the sauce and white wine, season with salt and pepper and cook for 10 minutes.

Pour over the cod to cover the potatoes and chives as well and place in a preheated oven at 180 ° C for 20 minutes.

Then place 1 tablespoon of mayonnaise over each piece of cod, put it back in the oven for another 15 minutes, remove and serve decorated to taste.

Serve hot and have a good appetite!
