Preparation

Preheat the oven to 250 (maximum). Cover two large baking sheets with baking paper or aluminum foil.
Place six sheets of nori, shiny side up, on the baking sheet.
With a brush, lightly brush the shiny side of the nori with water, make sure it reaches the edges, then carefully align another sheet of nori on top and press them together. Repeat with the remaining sheets until they are grouped.
Using kitchen scissors or a sharp knife, cut the nori into 3 cm strips, then cut these strips in half across. You will end up with about 42 strips. Arrange the fried strips in a single layer on the baking sheets.
In a small bowl, combine the garlic, sesame oil and cayenne pepper. Use the brush to cover the nori and sprinkle the salt generously. Use your fingers to sprinkle sesame seeds on the top of the nori.
Place on the grill in the middle of the oven for 15 to 20 minutes. They will turn a deep, bright green.
Remove from the oven, taste and sprinkle with more salt if desired. Allow to cool before eating to obtain maximum crispness.
