Preparation

Filling:
Select a green jackfruit and cook with the peel for about 20 minutes, in a pressure cooker. After cooking, remove the peel and shred. This process can also be done with a grater.
Lightly saute garlic and onion, add tomatoes, black pepper, salt, olives and curry, mix everything to incorporate the flavor and turn off the heat, and add the green smell.

Pasta:
In a saucepan, saute the garlic over low heat with a little oil. Wait to brown to add water, salt, saffron, the rest of the oil and the flour. Stir quickly until the dough comes out of the pan. Remove the dough from the pan and let it cool to form the drumsticks and fill.

Assembly
After the dough has cooled, take a portion and make a ball. Using your thumb, make a hole in the center of the ball and gradually increase the hole and place the jackfruit filling in that hole. Pull the dough up with your hand covering the filling and forming a pout. Once finished, dip each drumstick in a container with water and then in another with breadcrumbs. Fry in olive oil, coconut oil, hot vegetable oil by immersion.

  • 3 cups of flour
  • 4 cloves of grated garlic
  • 2 cups of water
  • 1 teaspoon salt
  • 1/2 teaspoon saffron
  • 1/2 cup olive oil
  • Filling:
  • 1 and 1/2 cups of cooked and shredded green jackfruit
  • 2 chopped garlic cloves
  • 1/2 chopped onion
  • 1 diced tomato
  • Salt, curry and black pepper to taste
  • 10 chopped green olives
  • 1/3 cup chopped green smell
