Preparation

Thaw the core of the scallops, remove the excess water with an absorbent paper. In an iron skillet or on a grill, pour the oil, wipe off the excess and grill the scallops, just one minute on each side. Reserve.

In the same frying pan, pour the champagne and let the alcohol evaporate, add the orange juice and let it boil. Remove from heat, add butter, wrap.

Place the scallops on a plate, drizzle them with the sauce, decorate with chives and thinly sliced ​​chilli.
