mix the flour and butter. spray the water and knead until it is easy to use. open and fold in three, two more times. let stand 1/2 hour. line the dough with a refractory glass pan. dent the edges with the prongs of a fork.
stuffing put sugar, wheat flour, egg yolks, butter, lemon juice and water in a pan. mix well and bring to a low heat to thicken. remove from heat, add egg whites, pour over the dough and bake in a mild oven for 1/2 hour.
