Preparation
The black pork meat is recognized by the accentuated flavor that pleases the palate of those who appreciate the real pork.
Cut the cheeks into cubes and season with a little salt and pepper.
Peel the onion and garlic cloves and chop them.
Blanch the tomatoes, remove the skin and seeds and cut them into cubes.
In a saucepan, sauté the onion and garlic until the onion is translucent. Add the bay leaf, a little parsley and the tomato cubes and let it sauté.
Add the white wine and cook a little, stirring occasionally.
Add the meat, stir, rectify the seasonings, add a little water if necessary and cook over a low heat until the meat is tender.
Remove from heat and serve with rice.
Sprinkle with parsley. Enjoy your food!
