Preparation

wash the tomatoes, remove their feet and cut them into pieces. in a large pan with a thick bottom, put the tomatoes, the cinnamon stick and cover with the sugar, let it stay like this for some time, (30 minutes + or-) until the sugar dissolves a little. bring to the boil and let it boil, the tomatoes release a lot of water, so let it boil over medium heat, until part of that water evaporates, this still takes some time, if you start pouring it out, lower the heat, be patient and keep it keep an eye on the candy, stirring from time to time. when you see that a good part of the water has already evaporated and the candy starts to gain more consistency, increase the heat to the maximum and cook until it reaches the point, stirring frequently so that it does not touch the bottom, be careful not to burn yourself, as this sweet splashes a lot. this last phase of the process, should not exceed 20 minutes, so that the candy is not caramel.
