Preparation

pasta:
place the wheat flour on a cutting board or on a marble surface. make a hole in the center and put the salt, sugar, egg yolks and butter. mix with your hands, add the warm water and knead until you get a smooth and smooth dough. make a ball, divide it into three pieces, put it back together, forming the ball again. sprinkle with flour and let stand 1 hour inside a cloth. open with the roller and fill. roll like a roll with the filling inside and place on a greased baking sheet. bake in a hot oven for about 45 minutes.
filling:
beat the egg yolks with the sugar. add the remaining ingredients and finally the egg whites. mix well and spread over the dough.
