Preparation

1. Wash the fold very well, and soak it in water seasoned with a few drops of lemon juice for about 15 minutes.
2. In a pressure cooker with water, cook the beans for about 20 minutes. Drain the beans when cooked. Reserve the cooking water.
3. Also cook the double in a pressure cooker with water, about 30 minutes. When it is cooked, cut it into pieces and set it aside.
4. In a pan, place the oil, the chopped onion, the sliced ​​carrots, the chopped garlic and the sliced ​​chorizo. Let it simmer for about three to four minutes. Add 50 ml of the cooking water of the beans, stir with a wooden spoon, and then pour the folded pieces seasoned with pepper and the bay leaf. Cook for about five minutes over low heat.
5. Add the beans, season with a little salt, stir and pour a little more of the beans cooking water (enough water to fully cover the preparation). Cook over a low heat for about 20 minutes until a creamy sauce.
