Preparation
1. Wash the fold very well, and soak it in water seasoned with a few drops of lemon juice for about 15 minutes.
2. In a pressure cooker with water, cook the beans for about 20 minutes. Drain the beans when cooked. Reserve the cooking water.
3. Also cook the double in a pressure cooker with water, about 30 minutes. When it is cooked, cut it into pieces and set it aside.
4. In a pan, place the oil, the chopped onion, the sliced carrots, the chopped garlic and the sliced chorizo. Let it simmer for about three to four minutes. Add 50 ml of the cooking water of the beans, stir with a wooden spoon, and then pour the folded pieces seasoned with pepper and the bay leaf. Cook for about five minutes over low heat.
5. Add the beans, season with a little salt, stir and pour a little more of the beans cooking water (enough water to fully cover the preparation). Cook over a low heat for about 20 minutes until a creamy sauce.
