Preparation

Put the garlic and salt in a mortar and step very well until it forms a paste

Cut the moray into slices and season with salt and set aside.

Prepare a vineyard by adding wine, vinegar, juice of half a lemon, chilli paste and garlic paste.
Add the moray in the marinade and set aside for at least 8 hours or overnight.

Put a frying pan with oil on the fire
Pass the moray through corn flour and fry until golden and crisp on both sides
