Preparation

Peel and finely grate the maqueños and form a puree. In a bowl beat the whites until they are foamy, add half the sugar little by little and beat well, then add the zest, lemon juice and continue beating, finally put the cornstarch mixed with the baking powder and the puree of the maqueño. Add the egg whites delicately to the maqueño dough so that they do not fall, put the dough in a fat-free, flour-free mold and bake for 35 minutes.
