Preparation

Pre-heat the oven at 180 °. Make some cuts on the loin of the sea bass, place it on a tray and season it, inside and out, with a little salt, pepper and lemon juice.

Peel the onion and garlic, cut the onion into half moons and chop the garlic.

Cut the leek into thin slices. Cut the pepper in half, remove the seeds and white skins and cut it into strips. Cut the bacon into pieces.

Bring a skillet with the oil to the heat, let it warm, add the garlic, bacon, onion and bay leaves and cook until the onion is translucent. Add the pepper and leek, mix and cook for 5 minutes.

Drizzle with white wine, rectify the salt, season with a pinch of pepper, let it boil and pour over the sea bass.

Cover with aluminum foil and bake for 20 minutes.

Remove the paper, leave it in the oven for another 10 minutes.

Serve hot, accompanied with potatoes and sprinkled with parsley. Enjoy your food!
