Preparation

Clean the squid by removing the ink and cleaning the entire interior. the tentacles are chopped together with the ham and chorizo.
chop the onion and garlic cloves and brown with 1 dl of olive oil, half a bay leaf and a sprig of parsley. when the onion is tender, add half the portion of the skinless and seedless tomatoes and cut into pieces and allow to cook everything. when this preparation is well refined, add the chopped squid tentacles, ham and sausage. let it cook for 10 to 15 minutes.
fill the squid with the preparation, without being too much, and close the bags with wooden sticks.
in a clay pot, pour the remaining onion and chopped tomatoes, parsley and bay leaf, salt and pepper and 1 dl of olive oil. the squids are placed on top of them, watering them with the remaining filling. cover the container and let the squid cook on a very low heat.
accompany with chips cut into thick sticks.
