Preparation

From the day before, the pork is prepared by washing it very well and opening longitudinally, removing all the meat. Good meat is marinated, without fat, with wine, onion, garlic, cumin, salt and pepper. The peas are boiled and when they are very tender, a stew is made for the filling with the potatoes, the shredded minced meat, the minced chicken and golden and salted pieces of leather. with all the stew the pork is stuffed, it is sewn with a thin pita and it is put in the oven for at least four hours.
