put sugar syrup with cinnamon stick, lemon peel and a little boiling ham. bring to a boil, add the egg yolks, place in a greased form with caramel, cook in a water bath. make the sauce, with sugar and boil over the heat. lead to the cold. make the egg threads with the egg yolks in a funnel, in the same syrup of boiling sugar.
plate the pudding with the orange sauce underneath, make a ball of egg threads and add the citrus and sugar ice cream.
make a crunch of ham to accompany the pudding.
