Morning the sardines, removing the offal and the head.
Wash well under running water, dry the sardines very well and season with salt, pepper and lemon juice.

Marinate for 1 hour.

In a bowl mix the flour with a little water.
The mixture should not be too diluted.

Add the eggs with the flour and stir well.

Season with salt and chopped onion.

Let stand for half an hour.

Pass the sardines one by one through this mixture and fry them, adding the crushed garlic with the peels and the chili.

Remove the sardines and dry the excess fat with absorbent paper.

  • 2 eggs

  • 4 cloves of garlic
  • salt q.s.
  • pepper q.s.
  • juice of 1 lemon
  • 1 chilli
  • olive oil or oil for frying (preferably olive oil)
